"Schweddy" Energy Balls



I have made this #FoodieFriday recipe in variety of ways for years, so I do not know from where the original recipe came to me. It’s very difficult to find a satisfying treat that doesn’t negatively affect either your waistline or wallet. The typical guilty pleasure deserts do just that: make you feel guilty, whereas the health food alternatives – it’s impressive how good they are now – are not exactly affordable for most weekly grocery budgets.  


These balls are meant to be a sweet treat alternative that you can quickly grab out of the fridge when you are on the go or simply craving something to tame the sweet tooth. With the base ingredients made up of essentially nuts and seeds, the variety of types, sizes, and flavor of balls you can create is endless!

Start with the basic recipe listed here and feel free to add and/or omit based upon your liking!

INGREDIENTS
  • 3 cups shredded coconut
  • 3 cups crushed nuts (i.e. almond, macadamia, hazelnut, cashew, brazil, walnut, pecan)
  • ½ cup chia and/or flaxseeds (other seed types work as well)
  • 1 ½ cups almond butter
  • 1 cup raw organic honey
  • 1 cup dark chocolate chips
  • 1 tbsp cinnamon

INSTRUCTIONS
  • Dump nuts mix into a food processor and blend until a “crushed” consistency.
  • Mix all ingredients into a large mixing bowl by hand.
  • Form into your desired size of balls.
  • Stick ‘em in the fridge for 30 minutes to set.
  • Store in fridge and enjoy when you please!
